So its June 15th

Library cookbooks...0 ( I did buy one)
NIghts I have cooked family meals...0 (working till 6 ever night)
Lunches made...lots
I make an awesome soup
Chickpea and Tomato?
1 can chickpeas, drained and rinsed
1 can crushed tomatoes
3 cups stock (any flavour)
7 sliced green onions
1tbsp rosemary (crumble if it is dry)
olive oil
2 cloves garlic crushed

1. heat onions, oil, garlic and rosemary until onions are soft
2. add tomatoes (do NOT drain) bring to boil, cook 5 min
3. add stock and chickpeas, bring to boil, cook 5 min
4. Eat

What constitutes a vegetarian cookbook?

I believe a vegetarian cookbook is one that is designed for a vegetarian lifestyle, generally including some good tips and ensuring that the meals include the essentials, like the lovely B12, Iron, etc.
My mother argues that it just needs to not have meat...basic true, but the one she likes uses beef stock half the time...not very vegetarian if you ask me.
So for the time being mum is using her Australian Women's Weekly Vegetarian Cookbook, some of the dishes have been great including a Black eyed Pea casserole that was more like a stew than a casserole but still really really good; some not so great like the weird Cabbage stir fry which was exactly that, stirfried cabbage with sweet potato...very weird combination.
I cannot wait till this semester, exams included are over so I can go back to scouring the library for amazing cookbooks and of course cooking...maybe I'll get some really good recipies and put the up here...I am getting very good at homemade mac and cheese, however don't put chickpeas in it...trust me on that one.

Mexico

So at most resorts there is like buffet style food and like one or two a la carte places. Well at the one cyndil picked for the wedding there was one buffet and 6 a la carte, of those 6 only one had a vegetarian entree and 2 had vegetarian starters...wtf. I asked in one if they would just do whatever it was without the steak with it and he;s like go to the buffet, well that's fine and dandy but I'm here with a wedding party sorry, I'd like to stay with them and not eat alone. Thankfully for the wedding they ordered veg for me...very good :D

Mountain of cookbooks

who would have thought the library would be such a great source of vegetarian recipies. I picked up a few cookbooks from there including some worldy ones and some normalesque ones. Tried a cool cauliflower cheese back as well as a casserole that could apparantly survive an atomic bomb...

Still having difficulties finding food on days I work or don't have a lunch break. Trail mixes are good but only fill you up so much before you crave the junk...this is going to take some creativity.

Trickiest: finding food to take to work...dam rules about nuts
...so many things fall under the may contain, or do contain nuts :( Going to have to be more creative by the time summer comes around

Fast Food Failures

It seems fast food is not designed for vegetarians whatsoever...if it wasn't so dam easy I wouldn't bother and of course mall food courts...dam you Jugo and being so expensive!!!
For example: Cross Iron Mills with Thunder
T: I'm thinking Arbys...oooh 4 for 6!
me: yeah its a sweet deal...looking at options like 2x mozza sticks, drink, and turnover
T: so I'm gonna get two arby's melts, a ham and cheese melt, and a junior deluxe...
me: why 4 sammiches?
T: well I'll have one of each kind and you can have the other one
me: umm no I can't...veg...
T: dam you...(insert rant about teeth, hippies and I believe rabbits)...mozza sticks or fries then?
me: You choose
T: of course CURLY Fries....
